A Snowy Day in NJ Brings Panic to Our Kitchen

The area in which we live is getting slammed for the second time in two weeks with a snowstorm of vast proportions.  Before it is over, this “snowicane” (as my friend, Suzie, has dubbed it due to the strong gusts of wind we are supposed to get) is going to dump somewhere between 12-16 inches or more, depending on the area!   Here is a picture of the winter wonderland we are living in!

Unfortunately, as a result of the inclement weather, the Tricky Tray auction for Jefferson School to which we are donating a cake was postponed until next Wednesday.  When we received the message from the organizer of the event yesterday, Meghan and I panicked! 

What were we going to do with the cake?  We worked so long and hard on it that we certainly did not want to see it go to waste.  Once the inital dismay abated, we did some research and were pleased to discover from some reliable industry sources that if we kept our creation refrigerated (which it has been since its completion), it would keep up to two weeks; not ideal but certainly better than we expected.  At least it wasn’t a loss!

So if you ever find yourself with a finished cake and a delayed or cancelled party, take comfort in knowing that your cake is safe – at least for a while!  Now off I go to navigate my way through the “snowicane” – wish me luck!
